Lara’s Smoked Salmon Quesadillas March 28, 2013

Ingredients 

1 package flour tortillas

1 ½ cups smoked salmon, flaked

1 ½ cups asadero cheese, grated

2 Tbl green onions, chopped

chili powder to taste

 

Directions

Mix together salmon, cheese and green onions in a bowl. Place one corn tortilla in a greased pre-heated skillet, spread filling over it evenly, and top with a second tortilla. Heat, turning once, until tortilla begins to crisp and turn golden, and cheese is melted. Place on a plate lined with a paper towel. Sprinkle with chili powder. Repeat.

 

Green Chile Pinwheels December 27, 2012

Ingredients

  • 1 package 10” flour tortillas
  • 2 boxes cream cheese, softened
  • 2 cloves garlic, minced (or more, to taste)
  • ½ cup roasted green chile, diced

Instructions

Mix the cream cheese, garlic and chiles thoroughly in a small bowl. Toast tortillas lightly in a hot, ungreased frying pan. Spread the cheese mixture evenly over entire tortilla leaving a ½ border around the edge. Roll tortilla into a log and slice into ½” wide pieces. Serve immediately for best taste, but can be refrigerated.

Ingredients

    For the Dressing

    • 1/4 cup freshly squeezed lime juice
    • 1/4 cup cider vinegar
    • 3 Tablespoons honey
    • 1/2 cup fresh cilantro, chopped
    • 1 Tablespoon garlic, minced
    • 1/2 cup olive oil
    • 1/2 cup vegetable oil
    • salt and pepper

    For the Salad

    • 4 cups finely shredded cabbage
    • 2 cups tricolored fried tortilla strips
    • 1 Tablespoon fresh cilantro, chopped
    • 1/4 cup toasted pumpkin seeds
    • 3/4 cup Cilantro Lime Vinaigrette

    Instructions

    For the Dressing

    In blender or food processor, combine juice, vinegar, honey, cilantro, garlic, salt and pepper. Blend till well combined. With blender on, slowly blend in oils till emulsified.

    For the Salad

    Combine all ingredients, tossing to coat evenly. Serve immediately.
