Nana Betty’s Banana Bread Supreme March 29, 2013

Ingredients

2 cups sugar

1 cup butter

4 eggs

2 cups mashed ripe bananas

1 cup sour cream

2 tsp vanilla

2 ¼ cups flour

1 cup oats

2 tsp baking soda

½ tsp salt

1 ½ cup nuts

 

 

Directions

Cream butter with the sugar.  Add eggs, banana and sour cream.  Add the dry ingredients and vanilla.  Fold in the nuts.  Pour into greased and floured baking pans.  Bake at 350 degrees for 55-60 minutes.

 

 

Monkey Bread

Ingredients

4 tubes buttermilk biscuits

1 1/3 cups sugar

2 Tbl. cinnamon

1 stick butter

1 tsp. vanilla

 

Directions

Cut each biscuit into quarters. Mix 2/3 cup sugar and one tsp. cinnamon. Roll biscuit parts in mixture and put in a greased bread pan. Melt butter and the remaining sugar and cinnamon until bubbly. Add vanilla. Pour over rolls. Bake at 350 degrees for 40 minutes.

Ingredients

¼ lb day old French bread, cubed

Water

1 ½ cups cucumber, peeled and diced

1 green pepper, seeded and diced

2 cloves garlic

2 tsp salt

½ cup olive oil

¼ cup wine vinegar

2 lbs ripe tomatoes, cubed

Directions 

Soak bread in cold water, turning once.  Squeeze out excess water.  Combine cucumber, green pepper, garlic, salt oil and vinegar in a blender.  Blend until smooth.  Add half of the soaked bread and continue blending until smooth.  Add tomatoes to the blender with the remaining bread.  Blend.  Add salt and vinegar to taste.  Chill.  Serve garnished with croutons, chopped crisp bacon and/or sour cream

 

Brunch Casserole January 9, 2013

14 slices white bread, cubed
2 ½ cups sharp cheddar cheese, shredded
1 lb sausage, sautéed until cooked
1 lb bacon, fried crisp and crumbled, mixed with the sausage
9 eggs
4 cups milk
1 tsp dry mustard
½ tsp Worcestershire sauce

Grease bottom of an 11 x 14 baking dish. Place half of the bread cubes in dish. Add half of the cheese and all of the bacon and sausage mixture. Then add remaining bread and cheese. Beat eggs and add to them the milk, mustard and Worcestershire sauce. Pour egg mixture over ingredients in the baking dish. Cover and refrigerate overnight. In the morning, let dish sit at room temperature for a bit to bring the temperature up and then bake it uncovered at 325 for 45 minutes or until it is brown and bubbly.

 

Puffed Apple Pancake

1 cup whole milk
4 large eggs
½ cup sugar
1 tsp vanilla extract
½ tsp salt
¼ tsp cinnamon
2/3 cup all-purpose flour
4 Tbl unsalted butter
2 Golden Delicious apples, peeled, cored and sliced
3 Tbl golden brown sugar, packed

Preheat oven to 425 degrees. Whisk milk, eggs, sugar, vanilla, salt and cinnamon in a large bowl until well blended. Add flour, and whisk until batter is smooth. Place butter in 9 x 13 glass baking dish. Place dish in oven until butter melts, about 5 minutes. Remove dish from oven. Place apple slices in overlapping rows atop melted butter in baking dish. Return to oven and continue to bake until apples begin to soften slightly and butter is bubbling and beginning to brown around edges of dish, about 10 minutes. Pour batter over apples in dish and sprinkle with brown sugar. Bake pancake until puffed and brown, about 20 minutes. Sprinkle with powdered sugar, if desired. Serve warm.

Chili Dip December 27, 2012

Ingredients

  • 1 (8 oz) package of cream cheese
  • 1 jar of Bush’s chili without the beans
  • 1 (8 oz) package sharp cheddar, shredded
  • Fresh cilantro

Instructions

Spread the cream cheese in the bottom of a glass or ceramic pie plate. Spoon the chile over the cream cheese and sprinkle the cheddar on top. Microwave the dish on High until it is bubbly, a few minutes.

Sprinkle the chopped cilantro on top and serve it with tortilla chips.

Queso Fundido

Ingredients

  • ½ lb muenster cheese
  • ¼ lb chorizo
  • 6 flour tortillas

Instructions

Slice cheese into thin strips. Peel chorizo and fry in skillet until it crumbles. Drain.

In a buttered flat casserole, arrange ½ of the cheese slices. Cover them with chorizo and the remaining cheese.

Place under the broiler about four inches from the heat, and broil until the cheese melts. Cut tortillas into quarters and heat according to package directions.
