Busy Day Cake June 2, 2013

Ingredients

1 2/3 cup G.M. flour, sifted  (I assume G.M. is “Gold Medal”, but any flour should work.)

1 cup sugar

¼ tsp salt

1 egg

2 ½ tsp baking powder

1/3 cup shortening

2/3 cup milk at room temperature

1 tsp flavoring (vanilla, almond, lemon etc.)

 

Directions

Sift flour, sugar, salt and baking powder together. Add shortening, milk, egg, and flavoring. Beat for two minutes. Pour into buttered and floured 8” square pan. Bake for 25 to 35 minutes at 350 degrees.

 

Frosting:

Mix together three Tbl melted butter, three to four Tbl brown sugar, two Tbl cream and ½ cup coconut or one cup nuts. Spread on cake while still warm. Place very low under broiler with heat turned low. Broil until it bubbles and becomes brown. Watch carefully.

Nana Hazel’s recipe, submitted by Stephanie: This is George’s favorite!

Rich, classic, moist, and pretty foolproof, this cake forms a crunchy bottom that you can see in the second picture. It’s simple enough to make, but elegant and tasty enough to serve to your favorite guests.

Ingredients

1 cup butter, softened
3 cups sugar
2 tsp vanilla extract
6 eggs, room temperature
3 cups all-purpose flour, sifted
¼ tsp baking soda
1 cup sour cream

Directions

Beat butter until light and fluffy. Beat in sugar. Add vanilla and beat well. Add eggs one at a time, beating well after each addition. Sift baking soda and flour together. Add to mixture. Fold in sour cream. Bake in a greased and floured tube pan at 300 degrees for 1 ½ hours or until toothpick comes out clean.

This was made every year for Nana Betty’s birthday with an orange curd filling and the perfect boiled frosting.

1234 Cake

I made this cake for the first time recently when the girls asked to make a cake. We were ready to begin when I realized we were out of eggs. Darn. Instead of dragging everyone to Publix, I remembered making vegan challah with flax seeds as an egg substitute, so I thought we’d give the flax seeds a go with the cake. It worked perfectly! We didn’t add the citrus juices, and instead, sprinkled in some Penzeys cake spice. It turned out moist and delicious and lightly spiced. I added a recipe of the Richmond frosting, and oh boy, was it good.

Ingredients

1 cup butter

2 cups sugar

3 cups cake flour

4 eggs

3 tsp baking powder

1 cup milk

1 tsp lemon juice

1 tsp orange juice

Directions

Mix all ingredients together and bake at 350 degrees for 40 minutes.

 

Perfect Boiled Frosting

Ingredients

1 ½ cups granulated sugar

¼ tsp cream of tartar

2/3 cup boiling water

2 egg whites

vanilla

 

Directions

Combine sugar and cream of tartar. Add boiling water and stir until sugar is dissolved. Bring to a boil and cook until thermometer reaches 240 degrees. Stiffly beat the egg whites. Add the sugar syrup gradually while beating. Beat until stiff enough to form peaks. Add the vanilla.

 

Mocha Frosting

Ingredients

¼ cup butter

3 oz cream cheese

1 tsp vanilla

¼ cup milk

3 tsp cocoa

1 tsp instant coffee

4 cups confectioners sugar

 

Nana did not include any instructions with this recipe.

 

Miriam’s Clam Fritters April 8, 2013

Miriam Follensbee was Nana Hazel’s cousin, but they called themselves twins. There is a photo of the twins together as teenagers on this book’s cover.

 

Ingredients

1 ½ cups flour

½ tsp salt

1/8 tsp pepper

1/8 tsp paprika

1 ½ tsp grated onion

10 chopped clams

2 tsp baking powder

½ cup milk or clam juice

1 egg

1 tsp melted shortening

 

Directions

Sift flour, salt, pepper and paprika together. Add liquid, egg, onion and shortening. Add clams. Drop by spoonfuls into deep hot fat at 375 degrees.

 

Chicken Cacciatore

Ingredients and Directions

Sauce: Saute 1 chopped onion and 2 cloves chopped garlic in 3 Tbl olive oil.  Add 1 (16 oz) can peeled, chopped tomatoes.  Add 1 tsp basil, 1 tsp oregano, 1 tsp sugar, 1 Tbl parsley and a little salt and pepper.  Cook for 30 minutes.

 

Flour either skinned chicken breasts or thighs, and brown them in ¼ cup oil.  Drain on paper towels.  Sauté one small sliced onion and ½ cup fresh sliced mushrooms.  Add sauce and ½ cup dry sherry. Place chicken in a shallow baking pan in one layer.  Cover with sauce.  Bake at 350 degrees for 45-50 minutes or until tender.

 

Chicken Alfred April 3, 2013

Ingredients

½ cup butter

2 – 2 ½ lbs chicken, split

2 large onions, finely chopped

1 lb mushrooms

2 Tbl parsley

1 cup sweet sherry

Salt and pepper to taste

 

Directions

Preheat broiler. Melt butter in large skillet. Arrange chicken on broiler pan and brush well with butter. Broil chicken about eight minutes each side. Turn oven temperature to 350 degrees. Arrange chicken in a greased roaster pan. Sauté mushrooms and onions until tender. Remove from heat. Stir in parsley and sherry. Season to taste with salt and pepper. Pour over chicken and bake for 40 minutes, basting frequently.

 

New England Baked Beans March 29, 2013

Nana’s mother, Louisa Lohr Willis, served this for Saturday night supper. The family always enjoyed the left-over beans for Sunday breakfast. Every Saturday night Nana’s father, George would remind Louisa to let the cat out before going to bed. In those days cats and dogs were fed supper left-overs. So every Saturday night the Willis cat also ate beans. Nana also said that they only way they knew it was Saturday was because of the beans.

 

Ingredients and Directions

Pick over, wash and soak beans overnight in cold water. Add ½ teaspoon baking soda and parboil until skins split. Mix about 1/3 cup sugar, 2 teaspoons salt, a little pepper, 2 teaspoons dry mustard. Add with 1/3 cup molasses to beans. Add three small onions and ½ pound salt pork. Cover and bake at 300 degrees for six to nine hours. Be sure to keep enough water to see it bubbling at top. Uncover for the last couple of hours to brown the salt pork.

 

Empress Orange Mold

This recipe came from Rose Coughlan, Nana Betty’s best friend’s mother and neighbor when they lived in Bogota, New Jersey.  Robin ended up making this dish for many holiday gatherings.

 

Ingredients

1 (3 oz) package orange Jell-O

1 ¼ cups boiling water or orange juice

1 can mandarin oranges, drained

½ cup mayonnaise

1 (3 oz) package cream cheese

¼ cup chopped nuts

¼ tsp nutmeg

¼ tsp cinnamon

 

Directions

Dissolve Jell-O in boiling water or juice.  Chill until slightly thickened.  Place oranges in mold and just cover with Jell-O.  Chill until set.  Reserve the remainder of Jell-O and do not allow to set.  Mix together the mayonnaise, cream cheese, chopped nuts and spices.  When Jell-O is set, add the cream cheese mixture and then the remainder of the Jell-O.  Chill and serve.
