- 1 fresh beet, peeled and shredded
- 2 med carrots, peeled and shredded
- 1/4 cup crushed pineapple
- a few Tbl of walnut pieces
- 1/2 Tbl of fresh ginger, minced
- white wine vinegar
- olive oil
- lemon juice
- All to taste.
Combine ingredients, tweaking amounts to your liking. Serve chilled or room temperature.
