1 ¼ cup flour, sifted

¼ tsp baking soda

1/8 tsp salt

1 stick butter

1 ¼ cup light brown sugar, packed firmly

½ tsp vanilla

1 egg, beaten

1 cup pecans, chopped medium-fine



Sift flour, baking soda, and salt in a bowl and set aside. Melt butter over low heat. Remove from heat and stir in sugar using a wooden spoon. Add vanilla, egg and finally the dry ingredients, stirring until smooth. Stir in chopped nuts last. Place rounded teaspoons of dough two inches apart on cookie sheets. Bake for 12 to 14 minutes at 350 degrees.


Pecan Cheese Ring December 27, 2012

  • 4 cups extra sharp cheese, shredded
  • 4 cups medium sharp cheese, shredded
  • 1 small onion, grated
  • 1 cup mayonnaise
  • 1 tsp. crushed red pepper
  • 1 cup pecans, chopped
  • one jar good strawberry preserves
  • Crackers


Combine the first six ingredients in a mixing bowl. Using your hands, shape the cheese mixture into a ring shape on a pretty plate, leaving the center empty. Serve with the strawberry preserves in the hollow center and crackers on the outer edge of the ring.

Sugar and Spice Pecans

spiced pecans


  • 1 lb pecan halves or pieces
  • ½ cup sugar
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1 Tbl water
  • 1 egg white


Combine sugar, cinnamon and salt; set aside. Beat egg white and water together and toss in pecans. Coat well. Add sugar mixture and stir to cover pecans completely. Spread on a greased cookie sheet. Bake at 300 for 35 – 40 minutes, stirring two times while baking. Cool well and store in an air tight container. (Walnuts also work well.)
