Ingredients (serves 4)

  • 1 bag (16 oz.) frozen shelled edamame, thawed
  • 1/2 cup dried cranberries
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh basil leaves, chopped
  • 1 teaspoon or less olive oil
  • Salt & Pepper to taste

Instructions

Combine all ingredients then drizzle with olive oil and season with salt & pepper. Can be served chilled or room temperature.
