Ingredients
- 3 cups diced, seeded, ripe tomatoes
- 5 tsp chopped fresh basil
- 1 tsp minced fresh garlic
- ¼ cup extra-virgin olive oil
- salt and freshly ground pepper to taste
- 8 thick slices Italian bread, toasted
- ¼ cup freshly grated Parmesan cheese
Instructions
Combine tomatoes, basil, garlic and oil in a mixing bowl. Season to taste with salt and pepper. Let marinate for 45 minutes. Spoon mixture generously over the toasted bread. Sprinkle top with freshly grated Parmesan cheese.

Leftover bruschetta? Not likely, but just in case, it can be used to make a delicious homemade pizza, or simply toss with fresh pasta and sprinkle liberally with Parmesan cheese. Mmmmm.
